Ingredients: For dumplings: 1.5 cups of flour self raising 1 egg Pinch of salt 1 teaspoon sugar 1 cup of milk (1/4) teaspoon baking powder if your flour is not self raising. For the soup: Half an onion 1 to two tomatoes Salt to taste Deep saucepan /pot medium size(20 cm wide)
Utensils: Mixing bowl Wooden spoon Deep saucepan /pot medium size(20 cm wide)
Steps: Mix all the dry ingredients first in a mixing bowl. Beat the egg and mix it into the dry ingredients. Add the milk dripping it but by bit till you get a smooth consistency, but not a runny mix. Chop the onion and tomato(s) Place the onion in a pot or deep saucepan with 2 tablespoons of oil, add a pinch of salt(salt to taste). Fry the onion till it begins to turn golden. Add the tomatoes Add a small amount of water, about 2 tablespoons. Simmer while stirring for 3 to 5 minutes. Place scoops of the dumpling mix into the soup placing them about a centimetre apart to allow for expansion when they cook. Lower the heat of the stove to allow the mix to simmer slowly. (50% of heat setting) Allow to simmer for 15 minutes. Serve while warm.
