Ingredients: Ingredients (serves 6): 500g of pumpkin skinned and diced 3 tablespoons of sugar 500ml of maize meal 25 grams of butter or 50 mls of cooking oil
Utensils: Utensils 1 standard potato masher 1 large flat wooden mixing spoon (uphini) 1 standard sized African whisk (uphehlo) 1.5 litre pot
Steps: Place the diced pumpkin in the pot and add 500mls (2 cups) of water. Bring to boil on high heat, for 30 minutes or until soft enough to mash. Take the pot off the stove and mash the pumpkin quickly with the potato masher, do not allow the mixture to cool. Add the sugar and butter( or oil) and use the whisk to mix well. Add one more cup of water and bring the mixture to a boil. Lower the mix to 50% heat and allow to simmer for 5 minutes. Using the flat wooden spoon, stir the maize meal into the simmering mix until a thick consistency is achieved. Once the desirable consistency is achieved, the pumpkin porridge should be left to simmer for 15 minutes. he pumpkin porridge is now ready, and can be served hot on it’s own or with fresh milk or with sour milk or milk curd. *Tip: the thickness of the mixture can be varied as desired. Pumpkin porridge can be eaten on it’s own, or served with: fresh milk, fresh cream, sour milk or milk curd.
