Irayisi yedobi- Peanut Butter Creamed Rice

Ingredients: • 3 cups of white rice • Peanut butter ( plain un-sweetened peanut butter) • A table spoon of sunflower oil. • salt

Utensils: • 1 medium sized pot • Wooden cooking spoon / spatula • A tablespoon

Steps: Cook the rice as per normal, following packaging instructions depending on your choice of rice. Once the rice is cooked, turn the heat down low and drizzle the tablespoon of oil over the rice, then a half a spoon of salt, and mix well. Gradually add 3 level tablespoons of peanut butter; that’s one level table spoon for each cup of rice. Add a table spoon at time, then mix then add some more. Mix well until all the rice is covered in peanut butter. This is a quick 3 minute process. When you are done the rice should have a creamy moist mashed texture. Serve warm! It can be accompanied by a savory relish of your choice as a lunchtime or supper meal, or consumed with milk as a breakfast cereal.
