Peanut Butter Creamed Kale (umbhida wedobi)

Ingredients: - 3 cups of Kale leaves sliced - half a medium sized onion - Peanut butter ( plain un-sweetened peanut butter) - 2 table spoons of sunflower/olive oil. - salt

Utensils: • 1 medium sized pot • Wooden cooking spoon / spatula • A tablespoon

Steps: Wash the kale in a colander. Even if the kale is already washed run some water over it. When you wash the kale it retains some water trapped between the leaves and it’s just enough to support the quick cooking process. Place your pot on the stove on medium heat. Add the cooking oil and the onions. Fry the onion in the pot on medium heat until golden. Add the kale, let it simmer for two minutes, the stir and wait another 2-3 minutes. The Kale will darken in colour and start to soften. Quickly add 3 level tablespoons of peanut butter. Mix well until all the kale is covered in peanut butter sauce. This is a quick 1-3 minute process. Let the kale simmer for 5 more minutes, and then the sauce will be reduced and become creamy and thick. Serve warm with pap. It can be accompanied by a savory meat option like roasted/grilled meat or a stew.
