Ingredients: Ingredients: 1 cup samp or dried maize seeds 1 cup dried sugar beans 1 cup dried Peanuts or Round-nuts
Utensils: Utensils: 1 large pot measuring cup colendar
Steps: ** Roundnut option: Using two cups of water per cup of dry ingredient, soak the round-nuts, samp (maize seeds) and beans separately overnight. Use a colander to rinse each of the ingredients, and drain excess water. Place the ingredients in a pot. Add water to just above the level of the ingredients. Bring to boil, and then lower the heat to 50% and allow the mixture to simmer slowly for 2 hours. Check on the meal now and again, and add water when the level drops, to ensure it does not burn, stir the mix only slight and lightly. The Samp takes the longest to cook(soften). Check the texture of the meal after 1.5 hrs, once the Samp is cooked (soft), add salt to taste and stir the mix lightly. Allow the remaining water to evaporate at the same medium heat setting. this shoudl take about 15 to 20 mins. Turn off the heat, and add salt to taste then allow the meal to cool before serving.
